Storage and freshness: how long each product keeps
The fresh buns hold for production day plus 3 days somewhere cool and shaded. Freezing correctly on delivery day saves most of the waste.

Not in the fridge
Bread and buns go stale faster in the fridge (0–5 °C) than at room temperature. Keep them cool and shaded, or freeze them — not in the fridge.
How to freeze fresh buns
Freeze on the day of delivery, in an airtight bag with as little air as possible, in one-day portions.
Date every bag and work first-in, first-out.
Never refreeze what has thawed — the texture breaks down.
Frozen products
Baked-and-frozen pastries are thawed and warmed; frozen dough needs proofing and baking. Times follow the instructions on the case.
